Menu: Éclairs


Pastry
classic, chocolate and chocolate black pepper

Fillings
- classic vanilla pastry cream.
- chocolate pastry cream (dark, milk or white chocolate)
- toasted coconut cream
- Grand Marnier mousse
- rose scented pastry cream
- white chocolate mousse with candied lime peel
- mango ginger mousse
- banoffee mousse
- violet and chocolate pastry cream
- spiced caramel
- buttered popcorn
- fruit infused cream cheese (mango, guava, golden apple, banana, strawberry)
- spiced pastry cream (cardamom, nutmeg, curry, anise, masala)

Glazes
- dark, semi-sweet, milk or white chocolate ganache
- caramel
- spiced caramel
- flavored poured fondant (pineapple, lychee, butter, anise, peppermint)

Extras
- crumbles (coffee toffee, nut brittle, spiced nuts, dried fruit, toasted pumpkin seeds,
                 chocolate covered nuts, seeds or fruit bits)
